I bought two used planes that had Dean's connectors on the 45-amp esc's. They worked perfectly when tested with Deans to XT60 adapters basket random.
I upgraded the connectors to XT60s. When I plugged in a battery, I heard a pop and both the battery and the esc became extremely hot, dead short.
When the wires are larger, I have trouble soldering. I'm pretty sure I overheated the leads and fried the esc's. Looking for soldiering advice?
without smoking a joint or frying my esc's I did make use of flux.

Well, fiddling with RC gear can certainly be frustrating! It sounds like you've been pretty thorough already. Beyond the usual calibration, I wonder if the ESC's throttle range is fully compatible with your transmitter's signal. Maybe try adjusting the travel adjust settings on your transmitter specifically for the throttle channel, pushing it beyond 100% in both directions, and then recalibrate. Perhaps it is related to kfc special. Good luck sorting it out!
